So you shopped at your local farmers market…..now what?

There are many different options you can utilize when cooking all those yummy veggies you bought. Below are a couple tried and true recipes my family loves (except that oldest child…). Feel free to try these as-is, or put your own spin on them! I like a little spice in mine, so I sometimes add red pepper flakes, or when I want the taste and no heat, smoked paprika is always a good addition!

Oklahoma Summer Veggie Stir-Fry

Serves: 4
Ingredients:

  • 1 zucchini, sliced
  • 1 crooked neck squash, sliced
  • 1 onion, sliced
  • 1 carrot, thinly sliced
  • 1 cup broccoli florets
  • 2 tablespoons oil (any kind)
  • Salt, pepper, garlic powder to taste

Instructions:

  1. Heat oil in a skillet over medium-high heat.
  2. Add onion and carrot, sauté for 3 minutes.
  3. Add zucchini, squash, and broccoli. Cook until tender (about 5–7 minutes).
  4. Season to taste and serve over rice or with a slice of bread.

The next recipe is great for a side dish, or even just a light snack, when that summer heat gets to be too much. You can make a creamy sauce for it to make it more like a slaw, but my family isn’t big on mayo. Again, any way you can make this your own will make it even better!

Cabbage & Carrot Slaw (No Mayo)

Serves: 4
Ingredients:

  • 2 cups shredded cabbage
  • 1 carrot, grated
  • 1 cucumber, diced
  • 2 tablespoons vinegar (apple cider or white)
  • 1 tablespoon oil
  • Salt, pepper, and pinch of sugar

Instructions:

  1. Mix cabbage, carrot, and cucumber in a large bowl.
  2. In a small bowl, whisk vinegar, oil, salt, pepper, and sugar.
  3. Pour dressing over veggies, mix well, and chill before serving.
